Each September, when other farmers are shutting down their operations, Judy Hageman and her husband, Bill Warner, are planting spinach in unheated hoop houses on their farm in a snug valley in southwestern Dane County. They harvest their crop through winter and into spring. Winter spinach grows slower than the summer variety and is thicker and hardier as a result, according to Bill. Judy promises it tastes sweeter, too. The couple first planted winter spinach in the mid-1990s and now sells to top restaurants in Wisconsin and Chicago and to Market shoppers when the weather turns cool.
